As Senior Sushi Chef, you’ll play a key role in leading the sushi section alongside the Head Sushi Chef. You’ll oversee preparation, service, and the training of junior chefs, ensuring every dish embodies precision, quality, and creativity. From managing stock and daily prep to maintaining the highest food safety and hygiene standards, your work will shape the guest experience at the sushi counter where artistry meets performance.
Lead and support the sushi team, ensuring smooth and efficient service at all times, upholding the Zuma DNA at all times
Maintain exceptional standards of presentation, taste, and consistency
Control food and labour costs through effective planning and organisation
Train, mentor, and develop junior team members to reach Zuma’s standards of excellence
Uphold all food safety, hygiene, and health + safety procedures
Collaborate with the wider kitchen and management team to drive innovation and consistency
Proven experience in high-end, fast-paced Japanese or contemporary fine-dining environments leading the Sushi section
Mastery of sushi preparation, knife skills, and product knowledge
Strong leadership qualities and the ability to inspire a team
Excellent communication and organisational skills
